Pesto and Serrano Ham Focaccia
Salty, crispy and incredibly filling. Meet your new favourite lunch time craving.
Serves - 1/2 Prep - 10 mins Cook - 5 mins
1 focaccia or any bread of choice
1 handful of Rocket
0.5 of a red onion
3 slices of salami
3 slices of serrano ham
1 beef tomato
2 tsp of pesto
1. Slice the focaccia in half and slice one half down the middle.
2. Slice the tomato, radishes and red onion and leave to the side. Toast the focaccia in a toaster for 2 minutes and then butter with the pesto.
3. place the serrano ham and salami on each side of the bread and grill for 5 mins until the meat starts to crisp.
4. Layer up the tomatoes, rocket, onion, radish and rocket and drizzle finish with mayonnaise and a sprinkle of black pepper. Place the bread slices together and serve.
