Butternut Squash, Halloumi & Kale Salad
Looking for a healthy, tasty and filing dish? Meet your new favourite lunch time craving.Think sweet red onion, crispy kale, creamy squash and salty halloumi finished with a zingy lemon dressing for a refreshing finish.
Serves - 2 Prep - 5 mins Cook - 30 mins
0.5 of a butternut squash pealed and diced
3 tsp of olive oil
1 tsp of Salt
1 tsp of Pepper
360g of kale
1 lemon juiced
100g of halloumi diced into thick chunks
1 red onion quatered
1. Pre heat the oven to gas mark 6 and place the diced squash on roasting tray, drizzle with 2 tbsp of olive oil and season with the salt & pepper, mix and roast for 30 min.
2. Add the kale to a separate baking tray, place the lemon rest of the olive oil in a ramekin and stir, drizzle over the kale. Top with the red onion (slightly breaking away the layers as you add), finish with the halloumi and roast for 10 mins.
3. Take the squash and halloumi out of the oven and place the squash in the kale halloumi mix, gently toss together and serve.
